Continuing with my oatmeal extravaganza, I changed it up one day to include strawberries instead of bananas.  Winner!  It was soooo good.  The sweetness of the strawberries blended well with the oatmeal.  I think I’m going to try pineapple next, but we shall see.

Summer Oats

Now onto my summer obsession, guacamole.  I love avocados.  Love them.  So when they are in season, I take full advantage of their cheapness and deliciousness.

 I think that I have included my recipe before, but basically, you take as many avocados as you want (I usually will use about three) and mash them in a bowl.  I toss in a bit of lime or lemon juice and one chopped tomato.  Stir to combine and then add a pinch or so of salt.  There you go.  I have made it without the tomatoes at it works just as well.

 That leads me to today’s lunch…

 I sauteed some mushrooms in olive oil and then when they were just about done, added some black beans (that were rinsed and drained) and a chopped tomato.  I placed it in a bowl with a scoop of homemade guac on top and then mixed it together.  Yum.

So there you have it.  Guacamole in all its splendor.  A lot of people bag on it because of the naturally high fat content in avocados.  Often though guacamole is made worse by the vehicle that gets the dip to your mouth, i.e. chips.  Avocados are filled with vitamins and the healthy fats that your body needs.  However, just with most fats you need to watch your intake in addition to your caloric intake.  So instead of using guac as a dip, try it as a topper for your salad!
