As I sit down to write this post I realize how boring my day was.  However, this morning I broke the treadmill.  Well not really.  I was running and then I heard a sound.  Suddenly the treadmill belt started to fold in like techtonic plates and then it ripped down the middle.  Needless to say I was able to stop it before more damage was done and prior to me getting hurt.  I was only 1.5 miles into my run though!  I got on the recumbent bike which I hate with a passion and went just over 8 miles.  45 minutes total.  Some random ab exercises were performed but after the treadmill fiasco I was pretty much fed up. 

Meals today were nothing special.  I was particularly hungry at dinner so after my PB and J I had some carrots and a little cereal for dessert. 

This is turning into less of a food post than a short post about my failed exercise morning.  So to turn this around:

Southwest Veggie Bake:

3/4 cup uncooked brown rice

1 1/2 cup water

1 can black beans, rinsed and drained

1 (11oz) can Mexicorn, drained

1 (10oz) can diced tomatoes and green chilies

1 cup salsa

1/2 cup chopped onion

1 can sliced ripe olive

Preheat oven to 350 degrees.  In a saucepan, bring rice and water to a boil.  Cover and simmer for 35-40 minutes.  In a bowl, combine beans, corn, tomatoes, salsa, and rice.  Transfer to a baking dish sprayed with non-stick cooking spray and top with onions and olives.  Bake uncovered for 30 minutes.  Let rest for 5-10 minutes. 

This actually works really well stuffed into tortillas or eaten as just a side dish with some sort of Tex-Mex meal.  You could also add some vegan cheese but I like this as is.
