Today has been one of those days. One of those depressing days. I will spare you the details for now, and instead discuss my meals. I just didn’t feel like working out, so that went out the window as well. I did find a delicious flavor combination that I now love! Unfortunately there are no pictures, because I just wasn’t in the mood. Lucky you though, because tomorrow will be pictures from work-lunch!

Lunch was late because of appointments, but it was still delicious: whole wheat sandwich rounds with natural applesauce and AB, chickpea salad, my last two cucumbers :(, carrots and hummus. For dessert, I enjoyed a granola bar and some watermelon. It was really good and it really hit the spot since it was so late. I spent the afternoon lounging and generally being a sad-sack and worked on my recipes. I enjoyed some delicious watermelon as a pre-dinner and then experienced my new flavor combo. I have always enjoyed fruit in salads because I love the sweet/savory flavors together. As I was throwing my spinach salad together, I decided to dice half a peach and throw it in. AMAZING! It was spinach, 2 tbsp hummus, green olives, some chickpea salad, and peaches. Wonderful. I was wary that the hummus and green olives would be too overpowering for the fruit but it was great!

I think the sky will be brighter tomorrow as I slowly get out of my funk. Plus I get to hang with the awesome people at work! The plan is to run in the morning and throw together a leg workout depending on time.

About OneVeganFoodie

Let's see. I am a certified personal trainer (CPT), group exercise instructor, nutritional counselor, and wellness counselor. My training background focuses mainly on getting overweight populations into shape, but I have worked with people wanting to gain strength/healthy weight and agility. I worked with the Army and the Marines for several years before settling into a civilian lifestyle. I'm still adjusting and I really miss it. I also enjoy coaching non-runners through their first running event. I post my workouts on here but remember that you need to seek medical advice prior to starting a new exercise regimine. I also love food. I've been vegetarian for 10 years and 4 of the last years I have been completely vegan. I love food and I love to cook. I follow a strict diet that I do not recommend for everyone, but I really enjoy as it keeps me healthy and helps me to know what is going into my body.
