Finally, I deliver on a promise :). I did make a green monster for dinner tonight. I have been craving one because I had not had one in a while. So without further ado:

This one was made with 1 tbsp almond butter, a bunch of organic spinach, about 1/4 cup almond milk, and one scoop Amazing Grass Chocolate. I’m still full. That will hold me through a workout in the morning until breakfast. Some thoughts about this one…it was not as sweet as monsters in the past have been. Probably because I do enjoy a little chocolate soy milk every now and then. Don’t get me wrong, I didn’t have to choke this one down. It was good even if it wasn’t as sweet. Plus it probably was better to not have all of the sugar. I also didn’t have any soy yogurt to add that sweetness as well. The jury is still out as to whether I like it better, but I think I might.

I completed another lesson of Rosetta Stone and it was funny because I know I am learning it. As I was watching the PBS series, “Jewish Americans,” I could understand some of the language! As a side-note, that was an excellent series. Just as good as my other favorite American Experience series “Eyes on the Prize” which is the history of African Americans in the US. Both excellent!

Workout in the morning and then who knows what the day will bring…

About OneVeganFoodie

Let's see. I am a certified personal trainer (CPT), group exercise instructor, nutritional counselor, and wellness counselor. My training background focuses mainly on getting overweight populations into shape, but I have worked with people wanting to gain strength/healthy weight and agility. I worked with the Army and the Marines for several years before settling into a civilian lifestyle. I'm still adjusting and I really miss it. I also enjoy coaching non-runners through their first running event. I post my workouts on here but remember that you need to seek medical advice prior to starting a new exercise regimine. I also love food. I've been vegetarian for 10 years and 4 of the last years I have been completely vegan. I love food and I love to cook. I follow a strict diet that I do not recommend for everyone, but I really enjoy as it keeps me healthy and helps me to know what is going into my body.
