I am so glad this week is over. It has just been rough. Hooray for two days off!
I ran three miles again tonight. I’m not going to say that it was easy. Probably the last 1/2 mile was when I started to hit a wall. But I made it, slowly but surely. I want to hit at least four miles before I start working on speed again. At least I know I am back in a groove, because I don’t want to cross-train, I just want to run all the time. My legs are super sore from yesterday mornings’ workout. I stretched really well after tonight’s run, but I know that running today will help me tomorrow. I hope to make it to the gym tomorrow so I can get in an upper body workout and get back on track with my strength training. And I will probably run again :). I’ve been considering doing Jillian Michael’s Making the Cut. I’ve done it before and had a lot of success building strength and cardio stamina. More on that later…

The food store list will be made tonight. I know that I am going to make the afore mentioned blondies. I pulled out a recipe for a Brown Rice and Barley Bake and Spring Rolls with a Peanut Satay. I want to do some baking so I am going to scour the cookbooks and come up with some things to make for the work crew.

Heinz has a vet appointment on Monday, but it should go well. His mange has almost cleared up and luckily his hair has grown back. Bean hasn’t had a seizure since April, so he seems to be hanging in there as well.

I am so looking forward to seeing J again. Countdown begins Sunday!

Look forward to food store stories and recipes in the next few days…

About OneVeganFoodie

Let's see. I am a certified personal trainer (CPT), group exercise instructor, nutritional counselor, and wellness counselor. My training background focuses mainly on getting overweight populations into shape, but I have worked with people wanting to gain strength/healthy weight and agility. I worked with the Army and the Marines for several years before settling into a civilian lifestyle. I'm still adjusting and I really miss it. I also enjoy coaching non-runners through their first running event. I post my workouts on here but remember that you need to seek medical advice prior to starting a new exercise regimine. I also love food. I've been vegetarian for 10 years and 4 of the last years I have been completely vegan. I love food and I love to cook. I follow a strict diet that I do not recommend for everyone, but I really enjoy as it keeps me healthy and helps me to know what is going into my body.
