Slow and Steady

So after about a month of no running and all walking, I ran today. Not a marathon or anything, but it felt good to get back into it. And thankfully, there were no crazy heart side effects. The old ticker seemed to function just fine. I ran a slow one mile and then walked for the remainder of my 50 minutes. I am probably going to stick with my mile for about a week and then increase by 1/4 miles or so. I missed running, as I get super bored with walking especially if there is nothing to read.
Luckily, on the reading front, I ordered Animal, Vegetable, Miracle today from I am looking forward to reading it and will give you a review. I also got Veganomicon too. If anyone has any recommendations for reading material or cookbooks, let me know.

Now on to the food front…
I had the last of my whipped beans today. That is going to be a delicious go to especially when it is cold. A warm bowl of its creamy goodness is just what a cold day will need. Dinner was a delicious natural PB and strawberry preserve sandwich with a tomato :). I am looking forward to Wednesday as that will be our department’s healthy potluck! I am planning on making three things. First, I told a friend of mine that I would make her a cake for her b-day. So that will be an Oreo chocolate vegan cake. Second, I am going to try out some no-bake chocolate cookies. Finally, a Mediterranean Potato Salad, which was chosen over a Black Bean Thai Salad by my deskmates. I still have to figure out what I will be making this weekend for my own food. I am considering a Roasted Veggie Orzo, which I will add almonds to for a protein. This is going to be a busy weekend!
